Abstract
【解決手段】本発明の脂溶性ビタミンの保存方法は、脂溶性ビタミンを含有する食品または栄養剤中において、前記脂溶性ビタミンを安定に保存するための方法であり、前記食品または栄養剤中において、前記脂溶性ビタミンに、たん白質を共存させつつ保存することを特徴とする。また、たん白質は、大豆たん白質であることが好ましい。

Description
(1) 脂溶性ビタミンを含有する食品または栄養剤中において、前記脂溶性ビタミンを安定に保存するための脂溶性ビタミンの保存方法であって、
前記食品または栄養剤中において、前記脂溶性ビタミンに、たん白質を共存させつつ保存することを特徴とする脂溶性ビタミンの保存方法。
本発明の脂溶性ビタミンの保存方法は、脂溶性ビタミンを含有する食品または栄養剤において、前記脂溶性ビタミンを安定に保存するための方法であり、前記食品または栄養剤中で、前記脂溶性ビタミンに、たん白質を共存させつつ保存することを特徴とする。これにより、食品または栄養剤中における脂溶性ビタミンの安定性を、長期に亘って向上させることができる。
たん白質は、これらの中でも、特に、大豆たん白質であるのが好ましい。
1.たん白質の添加の有無の検討
1−1.たん白質として乳カゼインを添加した場合の検討
以下の実施例1および比較例1において、それぞれ液状の経腸栄養剤を調製した。
たん白質として乳カゼインを含有する表1に示す割合の栄養素(栄養成分)を含む液状の経腸栄養剤をアルミパウチ内に充填された状態で以下に示すような工程を経て調製した。
なお、この経腸栄養剤のpHは、6.5であった。
経腸栄養剤中に含まれる栄養素(栄養成分)を表1のようにして、たん白質(乳カゼイン)に代えてペプチド(乳カゼインペプチド)を用いた以外は、前記実施例1と同様にして、液状の経腸栄養剤をアルミパウチ内に充填された状態で調製した。
なお、この経腸栄養剤のpHは、6.4であった。
以下の実施例2〜5において、大豆たん白質および大豆たん白質ペプチドの含有量がそれぞれ異なるゲル状の経腸栄養剤を調製した。
たん白質として大豆たん白質を含む表3に示す割合の栄養素(栄養成分)と、寒天およびアルギン酸とを含有するゲル状の経腸栄養剤をアルミパウチ内に充填された状態で以下に示すような工程を経て調製した。
経腸栄養剤中に含まれる、栄養素(栄養成分)と、寒天およびアルギン酸との配合量を表6のようにして、窒素源として大豆たん白質と大豆たん白質ペプチドとを含むようにしたこと以外は、前記実施例2と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。
経腸栄養剤中に含まれる、栄養素(栄養成分)と、寒天およびアルギン酸との配合量を表3のようにして、窒素源として大豆たん白質ペプチドを含むようにしたこと以外は、前記実施例2と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。
以下の実施例6、7において、それぞれ、ゲル状の経腸栄養剤および液状の経腸栄養剤を調製した。
表4に示すように、たん白質として大豆タンパク質と乳カゼインとを含有するようにした以外は、前記実施例1と同様にして、寒天およびアルギン酸の添加が省略された液状の経腸栄養剤をアルミパウチ内に充填された状態で調製した。
表4に示すように、たん白質として大豆タンパク質と乳カゼインとを含有するようにした以外は、前記実施例2と同様にして、寒天およびアルギン酸が添加されたゲル状の経腸栄養剤をアルミパウチ内に充填された状態で調製した。
以下の実施例8〜11において、たん白質として大豆たん白質と乳カゼインとを含み、寒天およびアルギン酸の添加量がそれぞれ異なるゲル状の経腸栄養剤を調製した。
経腸栄養剤中に含まれる寒天およびアルギン酸の含有量を、表6に示すようにした以外は、前記実施例7と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。

前記経腸栄養剤中において、前記脂溶性ビタミンに、たん白質を共存させつつ保存する際に、
前記経腸栄養剤中の前記脂溶性ビタミンの含有量をA[wt%]とし、たん白質の含有量をB[wt%]としたとき、前記脂溶性ビタミンの含有量と、たん白質の含有量との比であるB/Aが5×10 2 〜1×10 5 なる関係を満足することを特徴とする脂溶性ビタミンの保存方法。
(1) ビタミンAを含有するゲル状あるいは半固形状をなす経腸栄養剤中において、前記ビタミンAを安定に保存するための脂溶性ビタミンの保存方法であって、
前記経腸栄養剤中において、前記ビタミンAに、乳カゼインおよび大豆たん白質のうちの少なくとも一方からなるたん白質と、寒天とを共存させつつ保存する際に、
前記経腸栄養剤中の前記ビタミンAの含有量をA[wt%]とし、前記たん白質の含有量をB[wt%]としたとき、前記ビタミンAの含有量と、前記たん白質の含有量との比であるB/Aが5×102〜1×105なる関係を満足し、かつ、寒天の含有量が0.2〜1.0wt%であることを特徴とする脂溶性ビタミンの保存方法。
Claims (4)
- 脂溶性ビタミンを含有する食品または栄養剤中において、前記脂溶性ビタミンを安定に保存するための脂溶性ビタミンの保存方法であって、
前記食品または栄養剤中において、前記脂溶性ビタミンに、たん白質を共存させつつ保存することを特徴とする脂溶性ビタミンの保存方法。 - 前記たん白質は、大豆たん白質である請求項1に記載の脂溶性ビタミンの保存方法。
- 前記脂溶性ビタミンとして、ビタミンAを含有する請求項1または2に記載の脂溶性ビタミンの保存方法。
- 前記食品または栄養剤を40℃で3箇月間保存したとき、前記食品または栄養剤中における前記脂溶性ビタミンの残存率は、60%以上である請求項1ないし3のいずれかに記載の脂溶性ビタミンの保存方法。
