Abstract
Description
1.骨を手で外し、最初の切片を「ならして」おく。
2.最初の切片を、ほぼ完全なまま、皮、脂肪分、又は肉細片を損なわないように、手動により細かく切断する。
3.約20〜25gの重量の四角形の切片になるように手動により部分切断することは、経験に従い「目分量で」、「定形」ではない肉の部分を取り除くことによって行われる。
第1の切断装置(arrangement)内に第1の給送方向に食品を搬送する段階であって、該装置において、食品が切断ユニット内でストリップ(細長片)になるように細断される、食品を搬送する段階と、
第1の切断装置から第2の/他の給送方向/第1の給送方向とは異なる給送方向を有する1つ又は複数の他の切断装置にストリップを搬送する段階と、
1つ又は複数の他の切断装置内で細断する段階であって、他の切断装置(単数又は複数)内において、ストリップが切断ユニット内で矩形の肉片等の所定の重量及び寸法の切片になるように切断される、1つ又は複数の他の切断装置内で細断する段階と
を含むことが好ましい。
Claims (18)
- 食品、特に肉製品を、ほぼ四角形の肉片等の所定形状の切片になるように部分切断する方法であって、
該切断は2つの切断段階で行われ、第1の切断段階では食品を分断することによって該食品を準備し、第2の切断段階では該食品を所定の重量及び寸法の切片になるように切断することを特徴とする、食品を部分切断する方法。 - 第1の切断装置内に第1の給送方向に前記食品を給送するステップであって、該装置において、前記食品が切断ユニット内でストリップになるように切断される、給送するステップと、
前記第1の切断装置から、前記第1の給送方向とは異なる給送方向を有する少なくとも1つの他の切断装置へ、前記ストリップを搬送するステップと、
前記少なくとも1つの他の切断装置内で切断するステップであって、前記ストリップは、ほぼ四角形の肉片等の所定形状の切片になるように前記切断ユニット内で切断される、切断するステップと
を含む、請求項1に記載の食品を部分切断する方法。 - 前記第1の切断装置において、前記食品の形状、構造、及び/又は寸法の走査が行われる、請求項1又は2に記載の食品を部分切断する方法。
- 前記ストリップの形状、構造、及び/又は寸法の他の走査は、1つ又は複数の他の切断装置において行われる、請求項1ないし3のいずれか一項に記載の食品を部分切断する方法。
- 部分切断プロフィールが、前記第1の走査に関して、且つ、前記切片の所定の寸法及び/又は重量に基づいて確定される、請求項1ないし4のいずれか一項に記載の食品を部分切断する方法。
- 前記部分切断プロフィールの少なくとも一部は、前記他の切断装置の1つ又は複数にさらに伝えられる、請求項5に記載の食品を部分切断する方法。
- 2つ以上の他の切断装置の給送方向は、互いにほぼ平行に延びる、請求項1ないし6のいずれか一項に記載の食品を部分切断する方法。
- 前記少なくとも1つの他の切断装置の給送方向は、前記第1の給送方向に対してほぼ直角に延びる、請求項1ないし7のいずれか一項に記載の食品を部分切断する方法。
- 前記第1の切断装置内に前記食品を手動により配置すること、及び/又は前記他の切断装置の1つ又は複数に前記ストリップを手動により搬送することをさらに含む、請求項1ないし8のいずれか一項に記載の食品を部分切断する方法。
- 前記第1の切断装置内に前記食品を手動によらずに配置すること、及び/又は前記他の切断装置の1つ又は複数に前記ストリップを手動によらずに搬送することをさらに含む、請求項1ないし9のいずれか一項に記載の食品を部分切断する方法。
- 食品、特に肉製品を、四角形の肉片等の所定の重量及び寸法の切片になるように部分切断する機構であって、
第1の給送方向に前記食品を給送する際に該食品をストリップになるように切断する切断ユニットを含む第1の切断装置と、
1つ又は複数の他の切断装置であって、前記第1の給送方向とは異なる別の給送方向への前記食品の給送の際、及び搬送後に、前記ストリップを、ほぼ四角形の肉片等の所定の重量及び寸法の切片になるように切断する切断ユニットをそれぞれが含む、1つ又は複数の他の切断装置と
を含む、食品を部分切断する機構。 - 前記第1の切断装置内に、前記食品の形状、構造、及び/又は寸法を走査する測定手段が配置される、請求項11に記載の食品を部分切断する機構。
- 前記走査に基づいて前記切断手段のために部分切断プロフィールを設定するプロセッサ手段をさらに含む、請求項11又は12に記載の食品を部分切断する機構。
- 前記プロセッサ手段は、前記部分切断プロフィールの少なくとも一部を前記他の切断装置の1つ又は複数にさらに伝えるように構成される、請求項13に記載の食品を部分切断する機構。
- 前記第1の切断装置から前記他の切断装置の1つ又は複数に前記ストリップの1つ又は複数を搬送する搬送手段をさらに含む、請求項11ないし14のいずれか一項に記載の食品を部分切断する機構。
- 前記第1の切断装置内に前記食品を配置する配置手段をさらに含む、請求項11ないし15のいずれか一項に記載の食品を部分切断する機構。
- 請求項11ないし16のいずれか一項に記載の機構における切断装置の使用。
- 前記切断装置は、部分切断プロフィールの少なくとも一部を他の切断装置にさらに伝えるように構成される、請求項17に記載の切断装置の使用。
