Abstract
Description
プロバイオティックは、微生物、大抵は乳酸菌であり、これらは内因性ミクロフローラと一緒に規則的に飲食する際に胃腸管内で新陳代謝され、かつそれらの特性を影響させる。プロバイオティックは、胃中の特定の菌の生長および/または活性に選択的に必要とされる消化の悪い食品成分として定義される。通常は、これらはオリゴ糖類、例えばフルクトース−オリゴ糖類およびガラクト−オリゴ糖類である。

ホスファチジルセリン8質量%を有するマイクロカプセル
公知の“噴霧技術”を用いて、トリグリセリド、リン脂質および糖脂質の混合物から成るホスファチジルセリンの20質量%濃度溶液(Degussa Bio Actives GmbH 社のLeciPS(R) 20 F)を天然の植物性脂質と一緒にマトリックス中にカプセル封入した。天然の植物性脂質は次の特徴により特徴付けられる:
融点約55℃、過酸化物価最大2meq O/kg、酸素価最大1mg KOH/g、ヨウ素価最大5gl/100g、鹸化価185〜215mgKOH/g、天然酸の94%以上(約33%パルミチン酸、約60%ステアリン酸)を満たした。
ホスファチジルセリン8質量%、植物性脂質55質量%、トリグリセリド、糖脂質および他のリン脂質から成る混合物37質量%。
ホスファチジルコリン14質量%を有するマイクロカプセル
“噴霧技術”を用いて、トリグリセリド、リン脂質および糖脂質の混合物から成るホスファチジルコリンの35質量%濃度溶液(Degussa Bio Actives GmbH社の Epikuron(R)135 F)を天然の植物性脂質と一緒にマリックス中にカプセル封入した。天然の植物性脂質は次の特徴により特徴付けられる:
融点約55℃、過酸化物価最大2meq O/kg、酸素価最大1mg KOH/g、ヨウ素価最大5gl/100g、鹸化価185〜215mgKOH/g、天然酸の94%以上(約33%パルミチン酸、約60%ステアリン酸)を満たした。

公知の“流動床技術”を用いて、大豆を添加したレシチンから成る形の90%濃度のホスファチジルセリン粉末(Degussa Bio Actives GmbH社の LeciPS(R)90PN)を天然の植物性脂質と一緒にマトリックス中にカプセル封入した。天然の植物性脂質は次の特徴により特徴付けられる:
融点約55℃、過酸化物価最大2meq O/kg、酸素価最大1mg KOH/g、ヨウ素価最大5gl/100g、鹸化価185〜215mgKOH/g、天然酸の94%以上(約33%パルミチン酸、約60%ステアリン酸)を満たした。

Claims (22)
- 支持体材料と生物活性成分とから成る、生理学的に相溶性のリン脂質含有の安定なマトリックスを含んでいる機能食品。
- 液体、固体または半流動体の投薬型である、請求項1に記載の機能食品。
- お茶、コーヒー、ミルク飲料およびミネラル飲料、ソフトドリンク、パワードリンクまたはバイタルドリンク、植物性ジュース、フルーツジュース、果実皮ジュースまたはネクタール、液体香辛料、エリキシールまたはトニック、清涼飲料またはビールである、請求項2に記載の機能食品。
- 穀物製品、香辛料、植物抽出物、果物抽出物または果実皮抽出物、チョコバー、麺類、キャンディー、スライス製品またはグミ製品および発泡製品のようなソフト製品である、請求項2に記載の機能食品。
- バター、ヨーグルト、コッテージチーズ、クーミス、ケフィールのような発酵乳製品、既製ソース、マーガリン、パンに塗る物またはクリームである、請求項2に記載の機能食品。
- 支持体材料と生物活性成分とから成る、生理学的に相溶性のリン脂質含有の安定なマトリックスを含んでいる特殊食品。
- 特殊栄養食品である、請求項6に記載の特殊食品。
- マトリックスは、ペレット、顆粒またはカプセルであり、特に被覆と生物活性コアとから成るマイクロカプセルである、請求項1から7までのいずれか1項に記載の食品。
- マトリックスは、生物活性成分としてアセトン不溶性リン脂質成分を出発物質に対してそれぞれ≧5質量%、特に≧15質量%含有している、請求項1から8までのいずれか1項に記載の食品。
- マトリックスは、アセトン不溶性リン脂質成分を出発物質に対してそれぞれ5〜90質量%、特に20〜80質量%、とりわけ有利に40〜70質量%含有している、請求項1から9までのいずれか1項に記載の食品。
- マトリックスは、アセトン不溶性成分として、ホスファチジルセリン、ホスファチジルコリン、ホスファチジルエタノールアミン、ホスファチジルイノシトール、ホスファチジルグリセリン、それらのリソ変異体および/またはそれらの誘導体、および/またはスフィンゴリン脂質、特にスフィンゴミエリンを含有している、請求項1から10までのいずれか1項に記載の食品。
- マトリックスの支持体材料は、(非)変性炭水化物およびタンパク質、蝋、トリグリセリド、脂質およびポリマーのような疎水性材料、またはシリケートのような無機成分およびそれらの混合物を含有している、請求項1から11までのいずれか1項に記載の食品。
- 炭水化物は、デンプン(誘導体)、単糖、二糖ならびにそれらの糖アルコール、グルコースシロップ、デキストリンおよび例えばアルギン酸塩、ペクチン、キトサンのような親水コロイドならびにセルロース(誘導体)である、請求項12に記載の食品。
- タンパク質は、例えば、ゼイン、グルテン、ゼラチン、カゼインまたは乳清タンパク質のような植物性、動物性または微生物性のタンパク質、単細胞タンパク質、藻類からのタンパク質または組織化タンパク質またはこれらからの混合物である、請求項12または13に記載の食品。
- 支持体材料は、全体のマトリックス重量に対して、≦95質量%、特に30〜80質量%の間の割合である、請求項1から14までのいずれか1項に記載の食品。
- 全体のマトリックスは、特にカプセルの形で0.1μm〜5.0mm、特に0.5〜2.5mmの間の直径を有する、請求項1から15までのいずれか1項に記載の食品。
- マトリックスは、アミノ酸、ビタミン、ポリフェノール、炭水化物、脂質、微量元素、無機物質ならびにそれらの適切な誘導体のような更なる生物活性物質を含有している、請求項1から16までのいずれか1項に記載の食品。
- マトリックスは、球状またはレンズ型である、請求項1から17までのいずれか1項に記載の食品。
- マトリックスを、有利に0.5〜500μmの間の直径を有するマイクロカプセルとして含有している、請求項1から18までのいずれか1項に記載の食品。
- マトリックスは液体内容物を有している、請求項1から19までのいずれか1項に記載の食品。
- マトリックスは、特に胃腸管(GI-Trakt)中で遅延放出を発揮する、請求項1から20までのいずれか1項に記載の食品。
- 高い血清コレステロール含有量および糖尿病症状を予防するための、精神適応性、身体的耐性および能力を強化するための、請求項1から21までのいずれか1項に記載の食品の使用。
