本発明は、豆乳から豆腐および湯葉を、一般家庭においても容易に造ることのできる豆乳凝固装置に関するものである。

【従来の技術】
豆腐は元来、豆腐製造業者において販売用として大量に造られていた。豆乳の凝固器も大型のもので、主として蒸気による加熱を行い、凝固後、これを小さく切断し容器等に入れて販売するのが一般的であった。

ところが最近、比較的少量(2〜10リットル)の凝固器で、直接通電によるジュール熱を利用して豆乳を加熱凝固させる方式の豆腐製造器が開発され、居酒屋、レストラン、ホテル、豆腐料理専門店等において業務用として使用され、美味しい豆腐が比較的手軽に食されるようになっている。この方式によると、豆乳自体のジュール熱によって、基本的に豆乳全体が同時発熱し、蒸気加熱等の場合のような豆乳の対流が避けられて、均質緻密な絹ごし豆腐が造られる。

しかし従来のジュール熱方式の豆腐製造器は、温度制御、電流制御等に高価な部品を必要とし、一般家庭で購入するには価格が高すぎ、所要電流量も大きく、1回のロットも2〜10リットルでは多過ぎ、また家庭での使用時の難点もあった。
温度制御では、センサーを豆乳の中央部に差し込むようになっており、食品という観点から抵抗感があるうえ、洗うときや操作するときにセンサー破損のおそれがあった。

またジュール熱により豆乳が凝固する過程において、凝固しゲル状つまり豆腐になった状態では電気抵抗が大幅に小さくなり、電流はその部分を選択的に流れるので、凝固の遅れた部分はさらに凝固が遅れる。このため特に2〜10リットルの比較的大ロットの凝固器では、電流制御などによる高度の凝固制御を必要とし、装置が高価となる。

【発明が解決しようとする課題】
豆腐を造るには豆乳に苦汁(ニガリ)を加えて加熱するが、ニガリを加えずに加熱すると豆乳の表面に湯葉が造られる。したがって、ジュール熱方式の豆腐製造器を小型化し、上記問題点を解決することにより、家庭でも容易に豆腐および湯葉を造ることができる。

そこで本発明が解決しようとする課題は、豆乳に直接通電するジュール熱方式の豆腐製造器を小型化し、安価にし、かつ安全で使いやすく、しかも家庭において手軽に美味しい豆腐および湯葉を造り、風味のあるまろやかな出来立ての味を賞味できる、一般の主婦や子供でも操作可能な豆乳凝固装置を提供することである。

【課題を解決するための手段】
上記課題を解決するための本発明は、内容積1000cc以下の凝固用容器と、該容器内に対向配置される1対の電極板と、該電極板への給電制御機構からなり、該給電制御機構は、8℃/分以下の平均加熱速度で設定温度まで加熱するための豆腐用制御系と、加熱速度を制限することなく設定温度まで加熱するための湯葉用制御系と、該両制御系の切替手段とで構成されていることを特徴とする豆乳凝固装置である。

【発明の実施の形態】
本発明装置は、図1および図2の例のように、凝固用容器3と、凝固用容器3内に対向配置される1対の電極板1と、電極板1への給電機構からなり、給電機構は、図5の例のように、豆腐用制御系16と、湯葉用制御系17と、該両制御系の切替手段とで構成されている。本例ではスタート・切替スイッチ4を切替手段としている。

凝固用容器3は、一般家庭用として温度制御しやすいように内容積を1000cc以下に限定した。また豆腐用制御系16は、8℃/分以下の平均加熱速度で設定温度まで加熱するか、または8℃/分を超え15℃/分以下の平均加熱速度で設定温度まで加熱した後、該温度にて少なくとも5分保持する機構とし、湯葉用制御系17は、加熱速度を制限することなく設定温度に達したのち該温度に所定時間保持できる機構とした。

本例では、凝固用容器3は、図1および図2のように筐体9内のトレー6上に載置される。トレー6は豆乳がこぼれた場合の受け皿となる。筐体9は上下に分割され、上部を図2のように蝶番14を介して矢印の方向に開くことで、凝固用容器3を出し入れすることができる。

筐体9の上部には電極接触子8が取り付けてあり、筐体9を閉じると電極板1に電極接触子8が接触して給電可能となる。各制御系16、17は筐体9の上部に収納されてもよく、下部に、あるいは別体として設けてもよい。また給電用の電流は筐体9を閉じたときにのみ流れるようにしてある。図1において、4はスタート・切替スイッチ、5は表示盤、7は制御用の温度センサーである。

豆腐を造るには、筐体9の上部を開き、電極板1を取り付けた凝固用容器3に豆乳とニガリを入れて、筐体9の上部を閉じ、スタート・切替スイッチ4を豆腐側にセットする。すると、電極板1に給電されて豆乳はジュール熱により加熱され、例えば80℃の設定温度まで8℃/分以下の平均加熱速度に自動制御されて昇温し、自動的に給電停止される。豆乳は凝固して豆腐が出来上がっているので、筐体9を開き凝固用容器3を取り出し、中の豆腐を食器等に移せばよい。

湯葉を造るには、凝固用容器3に豆乳のみを入れ、筐体9を閉じてスタート・切替スイッチ4を湯葉側にセットする。すると、豆乳はジュール熱により加熱され、あらかじめ設定した設定温度たとえば90℃に、あらかじめ設定した時間たとえば5分間、自動的に保持され給電停止される。豆乳の表面には湯葉が出来上がっているので、筐体9を開いて凝固用容器3から湯葉を掬い取る。その後、再び筐体9を閉じれば同様にして湯葉を造ることができる。

本発明は、従来のジュール熱方式の豆腐製造装置の凝固用容器を小型化したものであるが、一般家庭においても購入して使用できるように、低価格かつ安全性および使い易さに重点をおき、しかも美味しい豆腐および湯葉が容易に造れることを目的とした。この目的は、凝固用容器3の容積と豆腐用制御系16での平均加熱速度および保持時間を上記のように限定することで達成することができた。

凝固用容器3を小型化すると1対の電極板1間の距離が短縮されて、給電時の電気抵抗が小さくなり、電極単位面積当りの電流が大きくなるので、短時間で豆乳温度が上昇する。このため豆腐を造る場合、豆乳内での電流密度の僅かなバラツキで温度差が生じ、早く凝固した部位に電流が選択的に流れて、電流密度のバラツキが拡大するという悪循環を生み、均質な豆腐を造ることが困難となる。
電流制御のみでこれを解決するには、小型化によって一層高度な制御が必要となり、低価格化に反する結果となる。

本発明装置では、凝固用容器3の容積を1000cc以下とし、かつ豆腐用制御系16での平均加熱速度を8℃/分以下に限定したことで、豆乳発熱のバラツキが豆乳液内の伝熱によって解消され、特別な電流制御を行わなくても、豆乳内で一様に凝固を開始させることができ、均質緻密な豆腐が得られる。さらに、あらかじめ設定した設定温度に達したのち該温度に保持することで、より均一な味の豆腐にすることが可能である。

実験結果によれば、平均加熱速度が8℃/分を超えると凝固にバラツキが生じ、均質な豆腐が得られない場合が生じた。しかし、平均冷却速度が8℃/分を超えても15℃/分以下であれば、設定温度に達したのち該温度で少なくとも5分保持すれば均質緻密な豆腐が得られる。

豆腐の美味しさは一般に、(1)舌や口で感じる…口当たり、噛み応え、喉ごし、(2)鼻で感じる…風味と香り、(3)目で感じる…見た目の綺麗さ、美しい肌と包装、(4)手で感じる…重量感と弾力、箸で持ったときの手応え、などによるとされている。これらは豆乳中のたんぱく質がニガリの金属イオンに触れて不溶性たんぱく質に変質する際の不溶性たんぱく質の構造が関係するもので、凝固速度を小さくした方がこの構造が緻密になることによると考えられる。
したがって、本発明装置により、好みに応じて加熱速度および保持時間をあらかじめ設定しておくことで、美味しい豆腐を造ることができる。

一方、湯葉の場合、豆腐のように凝固剤のニガリを使用しないので、温度上昇によって凝固開始することがなく、設定した最高温度まで加熱すればよい。加熱された豆乳が冷却されると表面に湯葉の膜が形成される。このため加熱速度を制限する必要がなく、設定温度近くに至って初めて温度制御を行えばよい。設定温度は湯葉の厚さや味の好みに応じてあらかじめ設定しておく。

本発明装置の温度制御は、例えばサイリスタ式電力調整装置付のプログラムコントローラでも、オン−オフ式のプログラムコントローラでも行うことができる。全体的な装置サイズや重量、価格等を考慮するとオン−オフ式の温度−時間コントローラを採用するのが望ましい。

温度制御に際しては温度センサーを使用して測温するのが好ましいが、一定量の豆乳を使用して一定品質の豆腐や湯葉を造るだけであれば、温度センサーを使用せずあらかじめ設定したプログラムで、例えば電流のオン−オフのみで行うこともできる。

測温するには、温度センサーとして熱電対などを使用することができる。熱電対は、ゼーベック型のアルメル−クロメル、銅−コンスタンタン、白金−白金ロジウムなど何れでもよいが、対象材の比較的低温で熱起電力が大きく、低価格であることからアルメル−クロメルが望ましい。

従来装置においては、白金の抵抗温度計を豆乳中に挿入して使用している。これは、直接通電されている豆乳の中では微小な熱起電力を検出するゼーベック型の熱電対が使用できないことと、豆乳の量が比較的多いため豆乳の代表的な測温個所として容器の中心部を選択せざるを得なかったことによる。また温度計はシース型となっており、ニガリ成分のMgCl2 などによる腐食防止のため耐食性ステンレス鋼のSUS316で保護したものを使用している。これが従来装置の価格を高くする一因となっている。

本発明装置では、温度センサー7は凝固用容器3の側壁または底部に装着するのが好ましい。図1の例では底部内に埋め込んでいる。側壁に装着する場合は電極板1のない面でもある面でもよく、電極板1に接触させて装着することもできる。
凝固用容器3の側壁内または底部に温度センサー7を埋め込んで装着した場合、豆乳内の直接通電による電流に影響されないので、熱起電力による安定した測温を行うことができる。

この場合、センサー7による測温結果と容器3内の実際の温度に差が生じ、この温度差を補正するための制御が必要となり、設定最高温度付近の加熱速度が特に小さくなったり、設定温度における保持の場合に若干のタイムラグが生じたりなどの問題が予想される。しかし、豆腐に凝固する適正設定温度範囲が70〜85℃程度と広範囲であるため、きめ細かい豆腐を造るうえでさして問題にはならない。

また温度センサー7を凝固用容器3の内面に露出して装着した場合は、豆乳の温度変化を敏感に測温することができる。電極板1に接触させて装着した場合も同様である。この場合、豆乳内の電流に影響されないように、電極板1への給電が遮断されているときに測温するのが好ましい。豆腐用制御系では加熱中のオン−オフ制御においてオフのときに測温すればよい。湯葉用制御系では一時的に給電を遮断して測定すればよい。この場合、金属薄小片12が腐食しやすいときは、伝熱性の防食コーティングがしてあればよい。

これらの場合において、図4の例に示すように、金属薄小片12を容器内面に露出して取り付け、この小片12に温度センサー7を溶接あるいはロウ接などにより固着することで、豆腐製造時においてもニガリ成分によるセンサーの腐食を防止することができる。金属薄小片12としては、熱伝導性のよい銅板などを採用することができる。

さらに、金属薄小片12の表面を伝熱性の絶縁被膜13でコーティングすることで、給電時でも豆乳内の電流に影響されずに測温することができる。絶縁被膜13としては、熱伝導性のよい絶縁体であればよく、たとえばフッ素樹脂(テフロン(登録商標))などを採用することができる。
温度センサー7のリード線11は、図4のように凝固用容器3とプラスチック板10で挟んで固定し、あるいは容器3の底部や側壁に埋め込んでおき、先端を筐体9に着脱できるようにしておくことで取扱いが容易となる。

また、本発明装置の温度センサー7は、図6に示す例のように、凝固用容器3の内面に取り付けられた金属薄小片12に面接触する伝熱板18と、伝熱板18に固着された熱電対19と、伝熱板18と金属薄小片12との加圧接触機構とで構成されているのが好ましい。

豆乳は市販のものを使用してもよく、大豆から作ることもできる。作るには大豆を水に浸して膨潤させたものをスラリー化後、煮沸したものを絞り、おからを分離する。市販のものは、通常5〜15℃に冷蔵されている。
一般に豆乳にニガリを混入した場合、約30℃に達すると凝固し始める。このため、本発明装置で豆腐を造るには、20℃以下の豆乳を使用するのが望ましい。

豆腐用の凝固剤としては、塩化カルシウム、塩化マグネシウム、硫酸カルシウム等を使用することができるが、本発明の目的であるまろやかな風味のある豆腐を造るうえで、塩化マグネシウムを主成分とする天然のニガリを使用するのが望ましい。
豆腐用制御系16における設定最高温度は、豆乳の凝固が最も進み、なおかつまろやかな豆腐とするために70〜85℃がよい。保持温度もこの温度範囲でよい。

湯葉の場合は、凝固剤を使わないため30℃になっても凝固開始しないので、使用する豆乳の温度制約はないが、腐敗防止のため、特に夏季などは豆腐の場合と同様20℃以下に保持されたものを使用するのが望ましい。
湯葉用制御系17の設定最高温度は、豆腐よりも約10℃高めの90℃前後が望ましい。保持温度も高めの85〜95℃が望ましい。

湯葉は加熱された豆乳の表面が冷却されて凝固膜になったものであるから、豆乳表面の空気に接触する面積が広い方がよく、豆腐の場合よりも上面を広くした容器を使用するのが望ましい。また、凝固用容器3の電極板1が装着されない側面をやや低くして、筐体9を開いた時に豆乳表面の風通しをよくすることも効果的である。

本発明装置は以上のように構成されているので、安全性に問題はなく、取扱い容易で主婦や子供でも操作可能である。使用後の洗浄は凝固用容器3を取り出し、電極板1を外し、また温度センサー7のリード線10を筐体から外して容易に行うことができる。また図6のようなタイプの温度センサー7を採用した場合は、リード線10の取外しは不要である。

【実施例】
(実施例1)
図1および図2に示すような凝固装置を試作し、豆腐製造の実験を行った。凝固用容器3はアクリル樹脂製で、底面が内法80mm×80mmの正方形、内容積500ccとした。電極板1はチタン板で、図3のように下部を絶縁プラスチック板2で連結し、電極面積6400mm2 、電極間距離80mmとした。電源は一般家庭用の100Vとした。温度センサー7にはアルメル−クロメル熱電対を使用し、図4のように容器3の内壁に取り付けた金属薄小片12にスポット溶接した。金属薄小片12は厚さ0.3mm直径7mmの銅板である。また小片12の表面は絶縁被膜13としてテフロン(登録商標)をコーティングした。

冷蔵庫から取出した市販の豆乳450ccを凝固用容器3に入れ、天然のニガリを4.5cc添加して攪拌し、筐体9内のトレー6上に載置した。設定最高温度を80℃とし、筐体9を閉じてスタート・切替スイッチ4を豆腐用にセットすることで自動的に豆乳が加熱された。

比較例として、加熱速度を制御せず、設定温度に達した時点で電流のオン−オフ制御を行った場合の温度および電流変化を表1に示す。給電開始5分後に80℃に到達し、平均加熱速度は15℃/分であった。その時点での状況は、部分的に凝固して豆腐になっているが、一部に未凝固部分があり、その表面には湯葉が生成しているという不均一なものであった。その後3分オン−オフ制御を行って取り出した豆腐は不均一で風味に欠けるものであった。
しかし、さらに3分、すなわち80℃の設定温度に達したのちオン−オフ制御を行って該温度に6分保持した場合は、均質な豆腐が得られた。

本発明例として、加熱途中でオン−オフ制御を行った場合の温度および電流変化を表2に示す。本例は、給電開始後、1分毎にオン−オフを繰り返した。表2において、例えば1分後から2分後までは給電をオフにしている。表2の電流値の欄は、例えば1分後に3.7Aから0Aになり、2分後に0Aから4.2Aになったことを示している。給電開始後13分で80℃に達し、平均加熱速度は5.7℃/分であった。この時点で取り出した豆腐に未凝固部分はなく、湯葉の生成もなく、均一で風味のある目的の豆腐が得られた。

(実施例2)
上記実施例1で使用した装置により、豆乳にニガリを添加せず、設定温度を90℃にして給電開始した。約8分で90℃に達し、その後オン−オフ制御により保定して5分後に筐体9を開けたところ、凝固用容器3内の豆乳表面には、たまご色の湯葉の膜が均等に生成しており、開放状態で表面が冷却されるにつれ、湯葉の膜が厚くなる様子が観察された。この湯葉を掬い取った後、しばらくすると新しい湯葉の膜が生成した。約5分後、豆乳の温度を保つために筐体9を閉じてオン−オフ制御を行い、反復して目的の美味しい湯葉を造ることができた。

(実施例3)
図7〜図10に示すような凝固装置を試作し、豆腐製造の実験を行った。本装置は、豆乳を入れた凝固用容器3を筐体9内に装入し、前蓋27および上蓋26を閉じてスタート・切替スイッチ4を豆腐用にセットすれば豆腐ができ、該スイッチ4を湯葉用にセットすれば湯葉ができる構造になっている。

図7のように、前蓋27は筐体9の底部前端に、上蓋26は筐体9の後部上端に、それぞれ蝶番14で取り付けてある。上蓋26には1対の電極接触子8が取り付けてあり、前蓋27には突起28が設けてある。筐体9の後部は制御室29になっていて、内部に制御器30が収納され、上面にスタート・切替スイッチ4と図9に示すような表示ランプ37が設けてある。

出来上がった豆腐の味は、実施例1の発明例と同様、まろやかで美味であった。

【発明の効果】
本発明装置を使用することにより、一般家庭において、風味のあるまろやかな出来立ての豆腐や湯葉を、必要なときに小人数でも必要量だけ、誰でも容易に造ることができる。装置の安全性は問題なく、堅牢でかつ使用後の洗浄も容易である。
