Claims (1)
- 【特許請求の範囲】 1.自由流動性脂肪組成物であって、 (i) 90:10乃至10:90の重量比の脂肪(A)及び(B)のブレンド、 (ii) 0乃至95重量%の充填物質を含み、 脂肪Aは少なくとも0.5重量%の長鎖多不飽和脂肪酸、好ましくはω−3 脂肪酸又は共役リノール酸であり、脂肪Bはハード脂肪であって、[ブレンド +組物中の充填剤(%)のN30(不安定)]が少なくとも70、好ましくは少 なくとも75、特に80乃至160である、自由流動性脂肪組成物。 2.脂肪A中の長鎖多不飽和脂肪酸の含量が、2重量%より多く、好ましくは4 乃至50重量%、及び最も好ましくは5乃至20重量%である、請求項1の自 由流動性脂肪組成物。 3.脂肪ブレンド(A)+(B)がN30>25、好ましくは>35、より好ましくは 40乃至80、及び特に45乃至75を示す、請求項1又は2の自由流動性脂 肪組成物。 4.充填物質の含量が、2.5乃至90重量%、好ましくは10乃至80重量% 、最も好ましくは15乃至70重量%である、請求項1乃至3のいずれか1請 求項の自由流動性脂肪組成物。 5.充填物質が、グルコース、フルクトース、又はスクロースのような糖類、穀 粉、ココアパウダー、コーヒーパウダー、コーヒー顆粒、ホエーパウダー、ス キムミルクパウダー、バターミルクパウダー、シリカ、アルミナ、チタニア、 及びジルコニアのような、食品レベルの無機固体粉末からなる群から選択され る、少なくとも一つの成分である、請求項1乃至4のいずれか1請求項の自由 流動性脂肪組成物。 6.脂肪ブレンドが、長鎖多不飽和脂肪酸を含む脂肪Aを20乃至80重量%、 及び80乃至20重量%の脂肪Bを含む、請求項1乃至5のいずれか1請求項 の自由流動性脂肪組成物。 7.ハード脂肪Bが、35℃より高い、好ましくは45℃より高い、特に50乃 至90℃の融点を有する、請求項6の自由流動性脂肪組成物。 8.脂肪Aが、天然の魚油、改質された魚油、魚油濃縮物、分画された魚油、酵 素的に処理された魚油又は微生物起源による油に由来する、請求項6の自由流 動性脂肪組成物。 9.ハード脂肪Bが、トリグリセリド、ジグリセリド、モノグリセリド及びこれ らの混合物であり、特にパーム油ステアリン、融点65℃の硬化大豆油、融点 65℃の硬化ヒマワリ油、ジステアリン、モノステアリン、モノパルミチンで ある、請求項1乃至8のいずれか1請求項の自由流動性脂肪組成物。 10.組成物が、5乃至500μm、好ましくは10乃至250μm、最も好まし くは20乃至200μmの分子径分布(ふるい分けによる)を有する、請求項 1乃至9のいずれか1請求項の自由流動性脂肪組成物。 11.脂肪Aが、少なくとも二つの異なる長鎖多不飽和脂肪酸L1及びL2を含み、 L1:L2>2、好ましくは>3の比で存在する、請求項8の自由流動性脂肪組 成物。 12.少なくとも脂肪を含み、脂肪が請求項1乃至11のいずれか1請求項の自由 流動性組成物の形で存在する、食品。 13.食品が、パン、ケーキ、ペストリー、又はクロワッサン等のベーカリー製品 、幼児用の配合食品、クリーマー、及びコーヒーホワイトナーからなる群から 選択される、請求項12の食品。 14.脂肪A及びBからブレンドが製造され、ブレンドは冷凍粉砕、噴霧結晶化、 又は噴霧乾燥される、請求項1乃至11のいずれか1請求項の自由流動性組成 物の製造方法。
