Abstract

Il dispositivo per riscaldare generi alimentari possiede un vano di cottura, che contiene il prodotto da cuocere, è chiudibile con una porta, è riscaldabile con un dispositivo di riscaldamento regolabile del vano di cottura e in esso si può immettere vapore da un generatore di vapore senza pressione. Il vano di cottura possiede almeno due distinti sistemi di adduzione del vapore, dei quali almeno uno tramite un surriscaldatore riscaldabile del vapore porta alla produzione senza pressione di vapore surriscaldato con una temperatura oltre i 100° centigradi, per immettere vapore, con differente temperatura di produzione del vapore e di surriscaldamento del vapore, in differenti zone del vano di cottura, che possono essere separate dal vano di cottura per trattamenti di generi alimentari con differenti temperature di trattamento.
