Abstract
Composition for freshwater crayfish soup, in the preparation of which the entire body of the crustacean is used, essentially consisting of the combination of the following ingredients, given as percentages by weight: - chopped crayfish 25-45 - cooking salt 0.20-0.50 - pepper 0.05-1.8 - anchovy paste 0.5-5.0 - oil 0.5-3.4 the remainder being made up of water, including the residual cooking water of at least some of the tails, this part corresponding to percentages selected from the range 2.0-10.
