Abstract

Method is partic. suitable for continuous baking ovens, which have moving baking surfaces, the baking space being heated indirectly by one or more streams of combustion flue gas. A heat exchanger system is used where the exhaust gas gives up heat in a heat exchanger to the incoming fresh air. In another heat exchanger the exhaust gas is used to generate steam. Water is also heated in heat exchanger using the air discharged from the baking space. Steam from both sources is mixed in a space and used afterwards for heating water and/or controlling the climatic conditions of the leavening process.
