Abstract
Die Erfindung betrifft ein Verfahren zur Herstellung von Parboiled Reis. Das Verfahren ist anwendbar fuer Langkorn-, Mittelkorn-, und Rundkornreis. Die Aufgabe der Erfindung besteht darin, Verfahrensbedingungen fuer die hydrothermische Behandlung von Rohreis aufzuzeigen, die gegenueber bekannten Verfahren zu Reis mit hohem Weiszgrad, hoher Ausbeute an Ganzkorn und zu einer Verkuerzung der Prozeszdauer fuehren. Erfindungsgemaesz wird die Aufgabe dadurch geloest, dasz auf eine Feuchte von * geweichter Paddy Reis in ueberschuessigem Wasser einer Mikrowellenbehandlung ausgesetzt wird, wobei innerhalb von * min eine Produkttemperatur des Reises von 100C erreicht und diese * min gehalten wird, anschlieszend das ueberschuessige Wasser abgetrennt und die Mikrowellenbehandlung des Paddy Reises bis zum Erreichen einer Feuchte von * bei der gleichen Temperatur fortgesetzt wird und danach der Reis in bekannter Weise weiterverarbeitet wird.{Parboiling Prozesz; Parboiled Reis; Paddy Reis; Hydrothermische Behandlung; Mikrowellen; Weiszgrad; Ganzkorn; Ausbeute}
