Abstract
Προϊόν υδρολύσεως του πολυσακχαρίτου του ταμαρίνδου χρησιμοποιείται ως υποκατάστατον μέρους των υποκειμένων εις μεταβολισμόν υδατανθράκων εις κατειργασμένα τρόφιμα προς παρασκευήν τύπων με μειωμένας θερμίδας των εν λόγω τροφίμων εχόντων εξαιρετικάς οργανοληπτικάς ιδιότητας. Το προϊόν υδρολύσεως του ταμαρίνδου περιέχει ολιγοσακχαρίτας με DP7 και συνηθέστερον ολιγοσακχαρίτας με DP7 και DP9. Το προϊόν υδρολύσεως του ταμαρίνδου δύναται να υποστεί περαιτέρω κατεργασίαν δια διασπάσεως τη βοηθεία ζύμης και/ή διηθήσεως δια μεβράνης προς απομάκρυνσιν μονοσακχαριτών και ολιγοσακχαριτών με χαμηλόν DP (DP <= 6) εκ του προϊόντος υδρολύσεως. ω
