990,068. Miniature cheeses. A. MINGIARDI. Feb. 27, 1962 [Nov. 15, 1961], No. 7593/62. Heading A2B. Miniature grating (granular) cheeses having substantially the taste, flavour and shape of full-size matured grating cheeses, e.g. Italian "Grana" cheeses of the Lodi or Parmesan type, are made by removing the rind or crust from one or more than one full-size grating cheese and cutting the cheese into pieces. These are reduced to grains in a grinding machine 2. The grains are mixed in a mixer 4 and passed through a chamber 6, from which air can be evacuated by a pump 6<SP>1</SP> and replaced, if desired, by an inert sterilized gas, and then through a metering device 7, in which the mixture of grains is divided into measured amounts. These are pressed, in vacuo or in an inert gas, into barrel-shaped moulds in the pressing unit 8<SP>1</SP> of a moulding machine 8. The moulded small cheeses are then dipped into molten grating cheese 9 in a dipping machine 10 and thus coated with a layer of molten grating cheese, which is allowed to cool and solidify. The resulting miniature cheeses are then wrapped in impervious wrappings on a machine 11.
