Abstract

In a continuous fermentation of, for example, brewers' wort by yeast in which reaction conditions in a first vessel to which unfermented wort is fed, will encourage the proliferation and growth of the yeast whereas conditions in the subsequent vessel or vessels (such vessels may be series, parallel or series-parallel connected) are such that the growth of yeast is discouraged and fermentation of the end product, beer, is encouraged, a variable proportion of the unfermented wort is introduced into a vessel other than the first in order to vary the dwell-time of wort in the first vessel without changing the total inflow into and total outflow out of the system.
