Abstract
982,011. Proving appliances. J. F. C. STEVENS, and D. J. WELLS. Feb. 20, 1961 [Feb. 19, 1960], No. 5920/60. Heading A4D. An endless conveyer 11 carries dough lumps from a loading position 22 to an unloading position 23 or 24 through a lower humidity and temperature dough recovery section 15 and a higher humidity and temperature proving section 16, the sections having respective steam inlets 19, 18 and being separated by baffling means 14 which may be a moving air curtain but as shown is a partition having controllable louvres, vents, ports or nozzles 21 to allow humidity equalization if desired. The conveyer 11 is motor-driven, optionally via variable speed and/or reduction gearing. The sections 15, 16 may have supplementary electric, gas or hot-water-pipe heating and supplementary water pans and/or sprays.
