965,468. Mincing. J. LYONS & CO. Ltd. Sept. 7, 1962 [Sept. 7, 1961], No. 32134/61. Heading A4C. [Also in Division B5] Chilled meat is minced by a cutting operation and the still cold minced meat is formed into a thin slice, e.g. as for a hamburger, the temperature of the meat being maintained preferably at or below freezing point throughout. Meat 1, e.g. at 25‹F, from cold store is carried on a conveyer 2, initially chopped by a reciprocating knife 3 and delivered to a bowl 5 rotated on a shaft 6 wherein it is finely divided by a rotary, multi-blade knife 7. The minced meat is delivered by a scoop 10 and guide 11 either directly or by a bucket conveyer 13 into a feed hopper 12 for a screw device 14 which delivers the meat to a rotary mould mechanism 15. The feed screw 14 is arranged to permit slip back of meat along the screw to prevent over feeding. The mechanism 15 comprises a frame mounted on a shaft 16 and carrying radial plungers 17 which are axially movable by a fixed cam 18 so that on rotation of the frame the plungers 17 are reciprocated. Adjacent the feed screws 14 the plungers 17 are drawn radially inwardly to define a mould cavity for the meat. On rotation of the mechanism 15 the plungers 17 are moved firstly slightly outwardly as at 19, to engage the meat with the bottom of a pile of interleaving papers 20 and subsequently a further distance, as at 22, in which position a scraper 23 engages the frame to ensure that the formed slice with paper adhered thereto falls on to an intermittently operated conveyer 24 to form stacks 25. The conveyer 24 may be advanced by means of spaced pins 26 on the mould mechanism 15. The stacks 25 are subsequently cold stored.
