Abstract
952,527. Moulding dough. SORENSEN BAKERY EQUIPMENT Ltd. Nov. 29, 1962 [Nov. 30, 1961], No. 43819/61. Heading B5A. A dough piece is sheeted, coiled, sheeted again, then coiled and delivered to a receptacle for baking. This ensures that the second sheet is symmetrical about lateral and longitudinal axes. Cross grained dough pieces can be produced by changing the direction of travel of the dough piece to a new direction at right angles after the second sheeting occurs. Apparatus for carrying out the process comprises (Fig. 5) sheeting rollers B, a conveyer b, a coiler b<SP>1</SP>, a further conveyer b<SP>2</SP> travelling at right angles to the first, delivering the dough to more sheeting rollers B<SP>1</SP> and a coiler b<SP>4</SP> on to a conveyer b<SP>3</SP>, through a shaper C and into a baking tin. A modification (Fig. 6) sheets the dough at D, coils it at d<SP>1</SP>, passes it through sheeting rollers D<SP>1</SP> on to a conveyer d<SP>2</SP> where it is flipped on to conveyer d<SP>3</SP> travelling at right angles to the other two conveyers, where the dough is coiled and shaped before passing to a baking tin.
