Abstract
In the continuous production of brewers' wort the mash is passed in a controlled, continuous, and agitated flow through conversion zones defined by one or more heated substantially horizontal (or slightly inclined) drums. Mash may be withdrawn from any zone, heat-treated and then returned to the same or a subsequent zone. Each cylinder comprises interior vanes and/or baffles fixed to and rotated with the cylinder (Fig. 2, not shown). Dry or wet grain in a hopper is fed by a variable rate conveyer 2 to a mill 6 and ground grist is extruded by a faster conveyer 10 (to prevent clogging) into a mixing pot 12 at a point below the level of mash therein, hot mashing liquor being fed in from a pipe 13 and <PICT:0943812/C3/1> mixing being effected by a paddle 14. The mash overflows down a tube to the rotating conversion drum 17, eventually overflowing the drum through a tube 19 for passage to a continuous filtration apparatus e.g. as described in Specification 943,811.
