Abstract

Proteins which produce haze on storing beer are removed from the beer by mixing in a finely powdered silica gel of 200-400 square metres surface area per gram, pore volume 0.6-1.2 ml./g. and the comparatively wide pore diameter 60-150 , and then filtering off the silica gel, a filter aid such as kieselguhr or cellulose being employed if desired. The use of 1 g. of the gel per litre of beer for a few minutes is sufficient. The silica gel is preferably a considerably dehydrated gel which can absorb and discharge water reversibly without volume change. The silica gel may be washed with water until the content of water-soluble matter is less than 1%, or, preferably, treated with an acid such as hydrochloric or nitric acid before being washed with water to a product having pH 5-7 in a 5% distilled water suspension. To beer for export, and so more subject to conditions favouring hazing, an antioxidant such as ascorbic or isoascorbic acid or sodium dithionite may be added.
