Abstract

In producing cake and pudding mixes which contain flour and fat or oil and are to be frozen until required for cooking, the flour-fat mixture is scalded, i.e. is subjected to the rapid application of the liquid of the mix, e.g. water or milk and water, at boiling temperature. A Yorkshire pudding batter formulation is: flour 28, cooking fat 2 3/4 , water 46 2/3 , egg 28 and salt 1. The production may be carried out in a bowl of large area in which the mix is spread as a thin layer, heat from burners being applied evenly under the bowl as the scalding liquid is poured on to the mix.
