Abstract
Crystalline optically active glutamic acid in a -rhombic form is prepared by forming a solution from water and an optically active glutamic acid and crystallizing glutamic acid from such solution in the presence of more than 0.02% by weight (based on the water content in said solution) of at least one of the amino acids alanine, phenylalanine, leucine, tyrosine, cystine, aspartic acid, lysine, histidine and arginine, or a hydrolysate of a protein containing at least one of said amino acids.
