Abstract
Milk tablets readily soluble in coffee and tea contain the constituents of milk with one or more of these constituents in excess, the compositions being: butter-fat 10-29%, milk protein 7-15% and milk carbohydrate 15-65%, with inorganic milk constituents and water, e.g. butter-fat about 20%, milk protein 10%, milk carbohydrate 60%, inorganic milk constituents and water 10%. A preparation for compressing to such tablets may be obtained by evaporating condensed milk of at least 6% fat content to a powder, and mixing the powder with milk proteins and lactose in the requisite proportions.
