Abstract
In a preparation of cocoa and chocolate products, the cocoa mass is dissolved or dispersed and/or emulsified in water &c. and the liquid is then separated into one fraction containing most of the fat and one or two fractions with a low fat content, one or more of the fractions being dried to form the dissolved product; separation is effected by means of an electrical or centrifugal separator. The hydrogen ion concentration of the solution is adjusted to below 6.8 prior to separation.
