Abstract
To produce a butter-like flavour in fat cooked foodstuffs after cooking, a minute amount of phenylacetaldehyde is added after cooking by any suitable means such as by spraying with a dilute solution of it. A quantity of 0.01-2 parts per million based on the weight of the fat may be used.
