Abstract

Sugar esters are prepared by dissolving or suspending a sugar in an aqueous alkaline medium, slowly adding a carboxylic acid chloride to the solution or suspension with turbulent agitation, maintaining the pH of the mixture between 7 and 11, adding to the crude soap-containing sugar ester thereby formed an aqueous solution of a non-acidic electrolyte salt or finely divided sodium chloride if said crude sugar ester contains sufficient water to enable a brine layer to be formed, permitting the mixture to separate into an ester/soap layer and an electrolyte/sugar layer, removing the latter layer and extracting from the ester-soap layer the sugar ester with an organic solvent therefor which is a non-solvent for the soap, e.g. a ketone, such as acetone, a hydrocarbon, a lower alcohol or a chlorinated hydrocarbon, and recovering substantially pure ester from the solvent, the ester-soap layer preferably being dried before the extraction. The preferred reactants are sucrose and C2-24 saturated and unsaturated fatty acid chlorides especially those of stearic and palmitic acids. The sugar and acid chloride may be used in molar ratios from 3 : 1 to 1 : 3. The desired pH may be maintained by addition of alkali. Esterification is normally effected at below 65 DEG C. Examples are given. The esters may be used in fatty food stuffs as anti-spattering agents. Specificatio 858,440 is referred to.
