Abstract

A sugar ester is purified by removing the organic solvent used in its production and adding preferably 3 to 20 times the quantity of water to the residue, heating the mixture to melt the ester (30 DEG to 60 DEG C.) and transforming the ester and its aqueous solution into a homogeneous emulsion by vigorous agitation, and precipitating the sugar ester by the application of heat and by the addition of salts and/or acids to bring the pH to between 4 and 7, the ester then being separated from the reaction mixture. The term sugar ester means esters of aliphatic carboxylic acids of 6 to 30 carbon atoms with mono, di or oligosaccharides or their derivatives. Suitable sugars, acids and esters are specified. The melting point of the ester may be reduced by adding fatty ester impurities. Preferably a volatile acid such as sulphuric or acetic acid or carbon dioxide is employed to give a r H of 6 to 7. Acid or neutral salts may be added to a concentration of 0.25-2.5 mols./litre to precipitate the ester. Separation may be effected by filtration, centrifugation or decantation and the esters are dried, or first taken up in an organic solvent and then recovered, after drying the solution, by distilling off the solvent.
