Abstract

A baking powder composition comprises a water-insoluble hydrated silicate, e.g. hydrated calcium silicate or magnesium silicate and preferably also includes sodium bicarbonate and an acid salt, e.g. mono-calcium phosphate and/or sodium aluminium sulphate, for reaction therewith to produce carbon dioxide. Fillers such as corn starch and calcium sulphate may be included in the composition.
