Abstract

In preserving coconut milk, i.e. the liquid obtained by macerating coconut kernel and extracting with water, the milk is concentrated, e.g. by centrifugal separation of the creamed milk or by vacuum evaporation of water, the concentrate is treated with 0.001-0.5% of a preservative from p-hydroxybenzoic acid, its metal salts such as sodium and calcium p-hydroxybenzoates and its esters such as the methyl, ethyl and propyl p-hydroxybenzoates, benzoic acid, its water-soluble salts and esters, boric acid and borax, formic acid, sorbic acid, its metal salts, esters and ethers, sulphurous acid, sodium bisulphite, metabisulphites and potassium pyrosulphite, salicylic acid and its salts and esters, vanillic acid esters, monochloracetic acid, dehydroacetic acid, sodium and calcium propionates, glycols, triethylene glycol and glycerol, hexamethylene tetramine, 3-acetyl - 6 - methyl - 1,2 - pyran - 2,4,3 - dione and its sodium salts, quaternary ammonium compounds and derivatives thereof, ethylene oxide, propylene oxide, methyl bromide, antibiotics, e.g. penicillin, streptomycin, subtilin and allicin, sugar, vinegar, common salt, acetic acid, lactic acid, mustard, nitrates, cabbage, onion and turnip extracts, oils of cloves, thyme and coriander, and fruit acids and alcohols, with 0.01-0.1% of a fat antioxidant from tocopherols, phospholipids, gum guaiac, esters of gallic acid, butylated hydroxyanisole, nordihydroguaiaretic acid, ascorbic acid and ascorbyl fatty acid mono-esters, and the disodium salt of ethylenediamine tetra-acetic acid, and with 0.1-0.5% of an emulsion stabilizer from polyoxyethylene sorbitan mono-stearate, mono- and di-glycerides of fatty acids, polyoxyethylene-fatty acid complexes, and cellulose ethers, and the mixture is sterilized by heating for 1-10 minutes at 220-170 DEG F. Containers of the sterilized, treated concentrate are preferably stored at 0-16 DEG F. The stored concentrate may be irradiated with ultra-violet light.
