Abstract

A macaroni which requires little or no cooking before serving is prepared by forming a macaroni dough, comprising gluten-containing flour, into shaped pieces and subjecting these to infra-red radiation, e.g. from an open flame, oven, electric element, whereby they are simultaneously dried and toast cooked. Cooking is effected at 200-400 DEG F. for 1-25 minutes, preferably at 250-350 DEG F. for from 5 to 15 minutes whilst agitating the shaped pieces of dough.
