Abstract
Food, esp. meat, meat products and fish, is wrapped in a sheet of carbonaceous material, e.g. matted or woven carbon fibres, and then placed in a high frequency oven; as the food is cooked by the radiation, this also initiates an exothermic reaction in the carbonaceous material, which reaches about 400 degrees and gives the outer layer of the food an attractive, scorch-grilled appearance. The appearance and texture are equal to these obtainable by radiant cooking.
