Abstract

Alginic acid, produced by adding a decolourised sodium alginate solution from a brown alga, e.g. Laminaria digitata, to a solution of calcium chloride of 3,5. Be1 containing sufficient hydrochloric acid to bring the pH of the solution to 4, the pH being maintained at or below 4 during addition of the alginate solution by adding more hydrochloric acid, is added to margarine in an amount of 0,03 to to 0,10% calculated on the water content. It improves the colour and taste and prevents the separation of oils.
