Abstract

The natural flavour of a processed, e.g. heated, dehydrated, canned or frozen, food containing a flavour precursor substrate and stabilized against deteriorative effects of enzymes and microorganisms in the fresh food is improved by bringing the processed food into contact, in the presence of water, with an enzyme preparation obtained from non-processed food of the same biological family as the processed food. Foods referred to are: peas, celery, leeks, cabbage, spinach, pineapples, onions, tomatoes, oranges, bananas, parsley, milk, watercress, mustard, strawberries, carrots, stringbeans, asparagus beets, maize, peaches. An antibiotic may also be incorporated. Water may be added to the contents of a package of the processed food and enzyme preparation.
