Abstract

Foodstuffs other than cereals and containing more than 75 per cent of water, e.g. meat, fish, including oysters, clams and shrimps, fruit and vegetables, including mushrooms, in the raw, cooked or partly cooked condition, are preserved against deterioration by micro-organisms by treating with chlorine dioxide and allowing, or causing by heating, any remaining chlorine dioxide to decompose. The chlorine dioxide may be used in mixture with air or other gas inert with respect to the chlorine dioxide and the food, or may be used in aqueous solution. The food may be sealed in impervious containers, e.g. cans, glass containers, during or after the treatment with chlorine dioxide. The treatment is advantageous preliminarily to freezing the food. Examples demonstrate the prevention of mould growth and the development of added thermophilic bacteria in varieties of beans, peas, pea juice, carrots, beets, pumpkin, tomatoes, corn, and green peppers, and the delaying of mould growth and development of sourness or rank odour in beef, fish, lamb, pork and veal.
