Abstract
Mould growth in foods, e.g. bread, white skim-milk cheese, pickles, meat, fish, canned fruit, fruit juices, is prevented by the incorporation of 0,01-10% of potassium sorbate. The potassium sorbate is conveniently added in aqueous solution.
