Abstract

A method for increasing the water-soluble portion of animal muscle protein and obtaining muscle protein extracts comprises treating the protein with water-soluble ionised or ionisable magnesium compounds in the presence of an alkali salt of a condensed phosphoric acid before or during the mincing of said muscle and/or the extraction process. The magnesium compound may be the magnesium salt of inorganic or organic acids e.g. citric, orthophosphoric condensed phosphoric, hydrochloric, ascorbic or lactic acid or mixtures thereof. Antioxidizing agents e.g. citric acid, its salts or esters. buffer substances e.g. citrates, orthophosphates and condensed phosphates, may also be present.
