Abstract

PURPOSE: To prevent the decoloration of herring roe and its discoloration during a preserving period, by soaking the herring roe in an aqueous solution of salt containing one or more of nicotinic acids, organic acids, condensed phosphates, and amino acids.
CONSTITUTION: One or more of nicotinic acid and/or nicotinamide, organic acids (acetic acid, lactic acid, citric acid, malic acid, ascorbic acid, etc.), condensed phosphates (polyphosphoric acid, pyrophosphoric acid, etc.), amino acids (glycine, alanine, etc.) are dissolved in 10W20wt% aqueous solution of salt to give a treating solution (preferably in pH 4W6.5), in which raw herring roe is soaked for 6W48hr. The amounts of the compounds used based on the raw herring roe are 0.05wt% nicotinic acids, 0.1W3wt% organic acids, 0.05W0.5wt% condensed phosphates, 0.1W2wt% amino acids.
