Dry steam is supplied from a steam trap 35 through a solenoid controlled valve 34 while condensate is first allowed to drain away through a solenoid controlled valve 47. Automatic operation is timed as follows. Dial 59 is set to the desired cooking period on scale 60, which rotates cam 56 and closes the normally open contact 65 of switch 52 and also opens the normally closed contacts 66 without effect because of the normally closed contact 65 is parallel therewith. When all the food is heated up the steam stops condensing and pressure in it builds up to expand bellows 53 to open contact 62 and close contact 70 of switch 51. Opening of contact 62 de-energizes solenoid 47<SP>1</SP> to close valve 47 while steam valve 34 remains open to build up the pressure to a predetermined value say 5 lbs. Bellows 53 are expanded to open contact 62 and close 70 to close valve 47 until full steam pressure 15 lbs. in the vessel 11. Closing of 70 energizes motor 55 of the timer which rotates the cam 56 for the period of time set by the dial knob 59. When notch 58 comes opposite to the cam follower 57, switch 52 opens its contact 65, thus de-energizing solenoid 34<SP>1</SP> and valve 34 closes to stop the flow of steam. Simultaneously, contacts 66 close to energize solenoid 47<SP>1</SP> to open valve 47 to exhaust. At atmospheric pressure the flexed door 14 is bent inwardly to allow it to be removed through the end opening having previously been flexed by the lever 20 to increase its top to bottom length to engage the flange 15.
