Abstract

An alkaline aqueous casein solution is extruded from an annular nozzle into an acid saline coagulating bath comprising dilute mineral acid in which is dissolved a sodium, potassium, or ammonium salt of a mineral acid or mixture of said salts, and the seamless tube thus formed is hardened by immersion in a bath containing formaldehyde. Preferably the coagulating bath contains dilute sulphuric acid and sodium sulphate and/or potassium sulphate and/or ammonium sulphate. The coagulating bath may also contain glycerol, a tanning agent, e.g. methylol diethanolamine, and a zinc salt of a mineral acid, e.g. zinc sulphate. As starting materials both acid and rennet caseins are suitable. The casein may be dissolved in ammonia solution, filtered and subjected to a ripening process prior to extrusion, and there may be added to the solution a small proportion of carbon bisulphide, urea, thiourea or cellulose xanthate. The temperature of the coagulating bath may be 20 DEG C. and the period of immersion of the tube in the hardening bath may be 3-10 hours. The products are useful as sausage casings.
