Abstract
A process of recovering from crude commercial papain, however previously processed, an enzyme of enhanced proteolytic activity, colour, solubility, odour and keeping qualities comprises extracting, preferably at 60-90 DEG F., the crude papain with an aqueous solution containing a compound such as sulphurous acid, sodium bisulphite or potassium metabisulphite, which provides 1 to 4 per cent by weight of available SO2, and 0.5 to 3 per cent by weight of a chelating agent, the weight ratio of crude papain to extracting solution preferably being between 0.3 and 0.5, the pH being between 4.5 and 7.0, preferably 5.0 and 6.0, then centrifuging or filtering with the aid of diatomaceous earth and finally spray-drying the clarified extract at a temperature which may be 250-600 DEG F. Specified chelating agents are ethylenediamine tetra-acetic acid and its sodium salt, phytic acid and its sodium and calcium salts.ALSO:A stable, soluble, highly active, powdered proteolytic enzyme composition comprises an extract of commercial crude papain with an aqueous solution containing 0.5 to 3 per cent by weight of a chelating agent such as ethylenediamine tetra-acetic acid and its sodium salt, phytic acid and its sodium and calcium salts, or citric acid and its sodium salt and 1 to 4 per cent by weight of available sulphur dioxide supplied from a compound such as sulphurous acid, sodium bisulphite or potassium metabisulphite, which extract has been clarified and spray dried.
