Abstract
Egg material such as fresh, preserved or dried whole egg or egg yolk, is extracted at a temperature not exceeding 50 DEG C. with an organic solvent, e.g. ether or a light petroleum fraction, capable of dissolving fats and egg yolk oils and containing up to 5 per cent water by weight and the insoluble residue is separated from the resulting solution which may be treated to recover the fats and oils extracted. The solvent in the case of dried egg material preferably contains 1 to 2 per cent water. The egg material prior to extraction or the residue may be mixed with proteins not derived from egg without impairing the foaming qualities. According to an example, 100 kg. whole egg powder is stirred for 30 minutes with 150 l. petroleum ether and 3 l. water at 20 DEG C., the mixture is then allowed to settle and the solvent removed by decantation. 125 l. petroleum ether with 1.5 l. water is added, stirred at room temperature for 15 minutes, allowed to settle and the solvent decanted. After a third extraction using 125 l. petroleum ether and 1 l. water and decantion of the solvent, the contents of the extractor are heated under agitation to about 50 DEG C. and the residual solvent is removed from the egg powder under reduced pressure.
