Class 59 [Also in Group VI] Fat, still attached to the rind of an animal, is removed by subjecting the rind cut into smallish pieces to impact e.g. by smooth-edged high speed rotating hammers 8 in which the broken fat pieces pass through a perforated screen 3 and down to a discharge outlet 6 while the mostly defatted rind falls down through an outlet 13 to a water bath at 100‹-212‹F.
