Abstract
A headed, gutted and de-finned fish is skinned by brief heating to loose the skin and then removing it by high-pressure fluid directed at an angle of 30-50 degrees. The flesh is then removed from the bones by cooking and then jarring the fish in an inclined octagonal tumbling barrel with holes in the sides to allow the flesh to pass through while the major bones pass out at the lower end. The flesh may then be separated from the minor bones by flotation in brine of 1.8 specific gravity whereby the bones sink to the bottom. The recovered flesh is soaked in water and is ready for further processing. Various temperatures, pressures and timing are given for the various operations.
