Abstract
The flavour of spray-dried, film-dried or freeze-dried whole milk, cream, skimmed milk, buttermilk or whey is modified to render it more suitable in milk chocolate manufacture by exposure to a heated gas, e.g. air, preferably in the presence of water vapour. Heating, e.g. for 30 minutes at 80 DEG C., may be effected continuously on a moving belt. The milk initially dried may be reconstituted milk powder. The process includes heating of mixtures of chocolate and spray- or freeze-dried milk powder, and includes extension of the process of Specification 783,861 for such heating of film-dried chocolate-milk and chocolate-sugar-milk products to the heating of spray- or freeze-dried chocolate-milk and chocolate-sugar-milk products, chocolate being ground, dehusked cocoa beans which may have been roasted and may have been partly or completely defatted.
