Abstract
A product in flake or powder condition for use in making milk chocolate is obtained by film drying a mixture of chocolate, i.e. the material obtained by grinding dehusked cocoa beans which may have been roasted and may have been defatted or partially defatted, and milk, skimmed milk, cream, buttermilk, whey, or dried milk, cream, buttermilk or whey reconstituted with water. The ratio of chocolate to milk solids is preferably not greater than 1 to 3. Sugar may be added to the mixture, preferably in quantity such that the ratio of total sugar, which includes the lactose, to milk protein is not greater than 2 to 1. The mixture is preferably homogenized before the drying, lecithin being added, if desired, to assist in the homogenizing. The drying may be effected under reduced pressure. The dried product may be heated, e.g. for 30 minutes at 80 DEG C., preferably in the presence of water vapour, to effect a flavour modification which renders the product more suitable for milk chocolate.
