Abstract

In making margarine, an oil-in-water dispersion having at most 16 per cent of water is made from the main components, this dispersion is pasteurized and is then immediately cooled and worked to produce a water-in-oil emulsion. Cooled rollers may be used for this final operation, and the operation is preferably conducted in a closed chamber or in a sterile room supplied with air which has been bubbled through an aqueous disinfectant. The dispersion is preferably kept in vigorous movement during the pasteurization.
