[Also in Group XIII] Apparatus for heating a vessel 1 containing a liquid, e.g. water, for cooking or processing a food in the liquid, comprises a number of tubes 2 which are disposed at the bottom of the vessel so as to be immersed in the liquid but to leave the interior of the vessel unobstructed, the tubes being connected at their respective ends to a combustion space 6 and exhaust space 7 located substantially at the level of the bottom of the vessel, the combustion space being provided with fuel burners 9 and the exhaust space 7 being connected to an exhausting fan (not shown). The heating tubes 2 are preferably U-shaped and are arranged as shown. Safety controls are provided such that the gas supply valve opens only if the fan is running and closes if the supply fails, at the same time switching off the fan. If the fan fails the gas valve closes automatically. The vessel 1 is thermally insulated and rendered airtight within an outer jacket and hinged lid (not shown). In operation, the water containing e.g. hams to be cooked is initially raised quickly to a high temperature which is however appreciably below boiling point whereafter the vessel is closed in airtight fashion and cooking is continued in still water at a very slowly falling temperature, heat being supplied during the initial period only.
