Abstract

Quick-cooking cereal or farinaceous food products are made by soaking a cereal or farinaceous starch-containing substance, e.g. rice, tapioca granules, barley, or macaroni, in water below the gelatinization temperature of the starch until 20-40 per cent. of water has been absorbed, heating in the presence of water or steam at a pressure of 5-20 lb./sq. in. above atmospheric pressure and at a temperature of 212-230 DEG F. to gelatinize the starch, and thereafter drying. Drying is preferably effected in such a manner p as to cause the interior of the substance to dry before its surface, e.g. drying is effected in hot air of high relative humidity, preferably after preliminary drying by infra-red rays.
