Abstract
Pectin is extracted from vegetable matter, e.g. sisal flesh by forming a column or bed of the matter and passing successively through it water, a dilute acid, e.g. a 1 per cent by volume solution of 35 per cent hydrochloric acid, a dilute aqueous solution of a neutral alkali metal salt, e.g. sodium chloride, or a neutral ammonium salt, and finally passing water through to extract an alkali metal or ammonium pectate sol which may be spray-dried directly or after partial concentration by evaporation. The sol may be converted to a pectic acid gel by adding a dilute acid such as a 0.1 per cent by weight solution of 35 per cent hydrochloric acid and the gel may be dewatered, dried and ground.
