Abstract

<PICT:0652265/III/1> <PICT:0652265/III/2> <PICT:0652265/III/3> Apparatus for treating yeasts in a sugary medium, checking the speed of a chemical reaction producing an evolution of gas or for carrying out an analysis of fermentation comprises a tank having an outer body 1 with heating means 3 therefor, an inner body 7 having walls apertured at 9 to allow the passage of gas to a distribution valve 26 for directing gas from the tank to a discharge (see Fig. 2), either directly or after first passing the gas through an absorption container 24, the arrangement being such that gas evolved by dough when placed in the tank, is alternately directed by the distribution valve first directly to the discharge recorder and secondly to the discharge recorder after passing through the absorption container, the gases flowing through the alternate circuits for equal periods of time, the discharge recorder giving a visual indication of the discharge of gases. The valve automatically stops this recording and produces a return to zero for example every 2 minutes. By thus comparing the total volume evolved in a given time, to the residual volume after absorption in the same time, a constant analysis is obtained of the CO2 content of the gaseous mixture issuing from the tank. As shown, the gas displaced passes through slot 9 into the annular space between 1 and 7 and into the collecting groove 10 connected via the valves 26, 25 to a container 12 and drives the liquid therein through the opening 13 into the tube 14 in which rides a float 15 connected by rods 16, 17 to the pen 18 which registers on the recording drum 21.
