[Class 49] '[Also in Group XXIX] A method of curing fish or other foodstuffs in a curing chamber comprises first drawing hot air alone through t h e chamber by suction for a predetermined period of time, thereupon stopping the in. duction of hot air and forcing smoke into the chamber under pressure for a predetermined period of time to produce a positive pressure in said chamber and thereafter drawing smoke through said chamber by suction until the curing is completed. As shown an apparatus for carrying out the invention comprises a curing chamber 1 filled with racks or rails (not shown) mounted above a furnace 3 provided with a door 4 for changing sawdust or small wood fuel which is ignited on the grate by electric heating elements 5, the smoke produced being discharged by fan 11 through duct 12 into the curing chamber via a diffuser 13 when the valves 16, 17 operated by handle 20 in the induction box 9 are as shown in Fig. 2. The smoke &c. from the furnace may byepass the chamber by ad- Justing the valves 16, 17 to the position shown in Fig. 3 when it passes up the vent pipe 14 connected to the induction box 9 which is also joined to the suction side of a fan 24 connected to the curing chamber to circulate the smoke therein. In this position atmospheric air may be drawn into the chamber via the port 15.
