636,471. Sterilizing apparatus. OMSTED, K. Dec. 13, 1946, No. 36898. Convention date, Jan. 9, 1942. [Class 49] In an apparatus for the sterilizing by heating and subsequent cooling of food in closed receptacles, comprising a retort in which the receptacles are placed in liquid under pressure and a container in communication with the retort, the container communicates by a pipe with a source of steam under pressure which is constant and which corresponds to the steam pressure desired in the retort. With the apparatus of the figure, a retort 1 containing the food receptacles immersed in a liquid communicates by a pipe 3, in which is a stop valve 4, with a container 2, and steam under pressure from a pipe 7 is led through pipes 10 and 12 to heat the liquid in the retort and also through a pipe 9 to the container 2, the pressure in the container being maintained at the desired degree by adjustment of a reducing valve 8. On completion of the heating, cooling water is conveyed under pressure through a pipe 13 into the bottom of the retort and the hot liquid is thereupon forced through the pipe 3 into the container 2. On completion of the cooling a valve 15 in a pipe 14 from the top of the retort is opened and the cooling water expelled through the pipe 14 to a drain pipe 17; the hot liquid is led back from the container by way of a pipe 5 to the retort on opening a stop valve 6 in the pipe 5.
