557,483. Treating soya beans &c. flour; food crisps. FERREE, J. C., GORDON, A. B., and SOYA FOODS, Ltd. April 17, 1942, No. 5150. [Class 58] [Also in Group VI] An edible product is made by mixing ground soya beans, haricot beans, wheat or maize germs, pea-nuts peas, lentils, or other protein-containing seeds with water or an edible aqueous liquid, such as milk or skimmed milk, preferably in the proportion of one part by weight of the ground seeds to 2-5 parts of liquid, and whipping the mixture to form a foam. Alternatively, the seeds may be ground in the presence of the liquid. Beans from which the fat has been wholly or partially removed, or the residue remaining after the whole or de-fatted beans have been extracted with water, may be used. In the preparation of food crisps, the whipped product is mixed with a cereal flour, flour obtained from pulses, nuts &c. vegetables or fruits in grated, dried or syrup form, cheese or dried milk or mixtures of these, other nutritional substances e.g. vitamins, calcium, potassum or phosphates may be added, and the mixture is heated to about 250‹ F. for a short time on trays or travelling surfaces.
